Kleine Zalze Family Reserve Sauvignon Blanc 2022

The grapes were hand-picked in the early hours of the morning and cooled down in the vineyard until fermentation with dry ice to preserve the fresh and classic aromas of Sauvignon Blancs. On arrival at the winery, the grapes were immediately crushed and left to rest on the skin for 12 hours. The juice was then drained from the skins and left to rest for 24 hours. The resulting clear juice was transferred to the fermentation tanks, where it fermented slowly with selected yeast strands at a cool, controlled temperature of 13°C. After fermentation, the wine spent 7 months on the lees before being bottled after a coarse filtration.
