Kershaw GPS Hemel-en-Aarde Ridge Pinot Noir 2019

The grapes were harvested, sorted and destemmed by hand. The destemmed grapes fell on a vibrating table to remove inferior berries before fermenting uncrushed in small 500 kg open tanks. The grapes underwent a 3-day maceration before spontaneous fermentation began. A gentle délestage program was put together, with all juice running out of the tank daily to remove unwanted yeasts. The grapes remained on the skins for 10-12 days before being basket pressed with care. Malolactic fermentation took place and the wine aged for 10-11 months in French oak barrels before bottling and release.
