Kershaw Elgin Clonal Selection Syrah 2018

The grapes for this highly endowed Syrah were harvested by hand under a blue autumn sky and transported in small baskets to the winery, where they were sorted by hand on a conveyor belt with great care. After destemming the grapes, after further examination, the berries fell on an automated selection table into small conical hoppers with a capacity of 500 kg, and were then lifted into open fermentation tanks by forklift trucks. The grapes were subjected to a three-day swelling phase before spontaneous fermentation began. The grapes were left on the skins for 17-21 days. The wine was then transferred to the cask by gravity (without the use of pumps). Once the malolactic fermentation in the barrel was completed, the wine was lightly sulphured and matured for 17 months in handmade French barrels from Burgundy and the Rhône region. 46% of the barrels used consisted of virgin wood, while the remaining proportion was made up of second and third wood.
