The hand-picked grapes were completely destemmed on arrival at the winery, but not crushed. After a five-day swelling phase, selected yeasts were added to the mash. During the fermentation process, the marc cap was submerged four to six times a day to ensure maximum extraction of tannin and flavor aromas. After fermentation was completed, the wine was pressed after 45 days and aged for 18 months in 100% new Taransaud oak barrels of 225 litres per barrel after completion of malolactic fermentation.
