Ataraxia Chardonnay Skin Contact 2023

This wine represents an exciting variation of Ataraxia's Chardonnays. The first fully skin-fermented Chardonnay from the house Ataraxia.

The hand-picked grapes on arrival in the cellar were first completely destemmed and gently crushed and transferred together with skins, seeds and pulp in two small fermenters to wait for the start of spontaneous fermentation. No additives were added to the mash during this process. Once fermentation was complete, the wine was transferred to 225-liter French oak barrels, followed by a 9-month aging period in barrel. No malolactic fermentation took place.
